In Typical Bone Up Style, We Present You Good News with a Production Delay Chaser

Well hello, there! I'm sure our "die-hard fans" are eager for us to "spill the beans" on that "big news" that landed "earlier this week," so I'll cut with the shuck and jive and get on with the newsin'!

Most importantly, of course: this past Monday we had the hearing for our pouring permit and we! Got! Approved! The hearing was a roller coaster of emotion, but everything ended up working out the way we wanted it to (we think), so that's cause for celebration! And - just as importantly - we'd like to say a big Thank You Very Much to those of you who came out in support of our silly little brewery: we do very much appreciate it (also, we're sorry that you had to miss the part where we showcased how bad we are at public speaking - we weren't really sure what was going on either, if that's any condolence). But anyway, now that the City of Everett has approved our pouring permit, that means we can serve pints as soon as we open,* right? R... right?
Hahaha no, of course not! Why would anything ever be that straightforward?** The positive outcome for this hearing just means that the paperwork can be forwarded to the ABCC (the state alcohol board). This generally takes six weeks, so long as everything was done right the first time and they don't lose any of our paperwork (unlikely). So we'll just keep pluggin' away at tryin' to open up as soon as we can, and hopefully the Powers That Be will expedite the heck out of that permit and allow us to serve some friggin' beer!
Speaking of pluggin' away at gettin' this place all spiffed up and ready to go: thanks to the generous help of Jimbo's parents, we made some big progress on our buildout this weekend! However, for reasons we don't really need to get into right now, we can't show you any in-progress photos. So instead, enjoy this picture of our kegs all purtied up!***

And lastly, on a bit of a less positive note (since it wouldn't be Bone Up if we went two whole weeks without unexpected production delays), we've had some unexpected production delays. For starters, our plumbing is still waiting to be done due to some unfortunate circumstances that have befallen our plumber,**** and that needs to be done before we can finish our wiring (so if you are or if you know a good, reasonably priced electrician in the area, let us know!). And on top of that, it's looking like we'll probably need to install yet another new HVAC system, but we're a little light on details at the moment. Suffice to say, it will (almost definitely) be time consuming, and it'll (very definitely) be expensive, so that's something to look forward to! So join us next week, when we're sure to find out that we were wrong about everything we heard this past week! Except for the production delays, those are a definite. ​
*Whenever that ends up being (hopefully soon! We're getting closer!). 
**In this case, "straightforward" means that we filled out a fifteen page application with five hundred pages of supplemental paperwork, plus several ads in the newspaper, two separate sets of registered mail sent to all of our neighbors, and a hearing or two. We might be stretching the definition of the word a bit. 

***And by "purtied up" we obviously mean "with stickers on them."
****He got in a car crash two days after he finished recovering from the flu.

In Which Walls Are Built and Curses Are Uttered

​Hello again! I know y'all are anxiously awaiting another 1,500 words about flooring, but that ain't the case this time around (partly but not entirely because we're done with the floors. For now. Hopefully. Maybe). After a small hurdle early on (we won't bore you with the details, but suffice to say it involved lawyers and the possibility of more town-hearing-related production delays), we had us a busy as heck week!

For starters, we received some goodies from the good folks over at Keg Solutions and now we got us somewhere to put our beer (once it exists)!

This is some of them. And we'll need to order a shitload more (possibly two shitloads) in the near future. 
What's more, our bar got delivered! Admittedly, it hasn't been assembled just yet so it's mostly just some stacks of bar components sitting in the brewery, but still! This place is startin' to look downright habitable*. ​

But wait, I have more things to say! With the generous help of our resident** wood enthusiast T-Bone (who, incidentally, built that bar that I was just talking about), we got us a cold room! Or rather, we have the frame of the cold room, but the rest of it is just insulation (and how hard can that be to install?). Now we got somewhere to put all those dang kegs that we keep tripping over!

And - to bring this up one more dang time*** - our hearing for our pouring permit is next week! We expounded on the details a bit last week, but in short: if you'd like to come out and speak in support of us pouring pints (particularly if you're a resident of this fine city), we would greatly appreciate**** it! The hearing is on Monday, January 25th at 6:30 PM in Everett City Hall, 2nd floor, room 29. So come on out, and make sure you say hi before and/or after!
*Assuming your definition of "habitable" includes "cluttered with construction debris."
**Assuming your definition of "resident" includes "lives 150 miles away."
***Well, we'll probably tell you about the results; be they glorious, life-affirming victory or brutal, soul-crushing defeat. 
***If you're thinking "they really should buy me a beer for coming out to speak at this boring-ass meeting," that thought has crossed our minds. But, perhaps more importantly, the thought that crosses our minds immediately after that is "...but that's illegal in like three different ways so we can't do that."

I Really Hope You Wanted to Read About Flooring Again! (And Who Wouldn't?)

Hey hey say, what say say! We've had us a week chock full o' paint fumes and progress, just like old times! We made some big strides in gettin' that wood floor of ours purtied up and ready to get walked on* and damn but it does look fine. Just take a second right now and see for yourself how good it looks:

We'd like to emphatically thank Sam (Jimbo's dad) and Jim (Jimbo's uncle, who may or may not also go by Jimbo) for dedicating a significant portion of the last several weekends to helping us install this floor. Thank you for your advice, your patience, your pickup truck, your blood offerings, and your time. Without your help, these overeager brewers (versed poorly in the ways of woodworking) would have likely ended up somewhere on the other side of the building with boards nailed to their limbs (probably dehydrated).

We ain't got much other than that goin' on at the moment, but we've got a bunch of big ol' things lurkin' away on the horizon for the next week: our walk-in is getting installed, our kegs are arriving, our bar (or at least part of it) is getting delivered (!!!!), and our plumbing is (theoretically) getting finished! Yessir, things are really back on track after that delay** we had a little ways back. 

And as we mentioned last week, we've got an upcoming hearing at city hall to determine whether or not we can get our pouring permit (which, if you're just now joining us, will allow us to serve pints in our taproom instead of just staring wistfully at a bunch of largely-unused bar space), and we would be just thrilled to pieces if any of y'all felt like coming out to support us! The hearing is on Monday, January 25th at 6:30 PM in Everett City Hall, 2nd floor, room 29.
We've had one or two people ask questions about how this whole thing will go, and while we haven't been through this type of hearing specifically, we can make some educated guesses as to what y'all can expect if/when you come out:
  • The committee will call on the two of us to stand up and they will probably ask a bunch of questions that we hadn't anticipated. This is primarily done to show everybody how bad we are at public speaking (very). 
  • Next, the committee will ask if anyone attending is in favor of getting this permit approved - this is your time to shine (should you show up, of course). They'll probably just take down your name and address, but there's a possibility they'll ask why you're in favor of having this permit issued (more on this in a second). 
  • You probably don't need to be an Everett resident to vote in favor of our pouring permit, but it certainly helps (we're guessing that the town is mostly interested in hearing from its own residents).
  • After people speak in favor of the permit being issued, people who are opposed to it will be given a chance to say their piece. We will not have any way to respond to or address the concerns voiced by these people (but it's our experience that people's biggest worries are noise levels and parking).
So with that in mind, if you do decide (or get asked by the committee) to say a little bit about why us getting a pouring permit would be a good idea,*** it certainly wouldn't hurt to talk up the fact that we're trying to do something good for the community. We do want to be good neighbors, and we really just want to provide a comfortable place for people to drink a tasty beer or two - ideally without stepping on anyone's toes. So if you'd like to mention that craft beer drinkers tend to be a fairly orderly/responsible crowd, then that couldn't hurt. Or maybe you might want to bring up the fact that we're moving into an abandoned-looking old factory and working to make it someplace that people will want to go to (and which, incidentally, will have ample parking). Or, if you're a more pragmatic sort, you may want to mention the revenue we'll be bringing to the town. 

Those are just suggestions, of course, so feel free to disregard as you see fit. But if you do come out, make sure to say hi and/or introduce yourself, we'd love to meet you!

In Which We Continue Doing All That Stuff We Already Talked About

Hello and good day! We've had us another productive-as-heck week, no naps or pie required.* While we've been pluggin' and chuggin' away in order to get things ship-shape as soon as humanly possible, there's not much that's "new" or, for that matter, "completely finished."** Remember when we said our ventilation system was finally in progress? After several months' worth of delays? Well our ventilation guys are done, so now all we need to do is bring in a plumber and an electrician and then a different ventilation contractor and probably one more electrician. So that's basically wrapped up. And that new wood floor that we've been talking about? We've got more of it! All the boards are in,*** and it's looking great!

In other "exciting" news, the Bone Up Paperwork Plant is back up and running! We had a brief hiatus wherein we thought we had most of our "ducks in a row," only to receive a 75-page permit application from the MWRA (the sewer sheriff) - delivered via the classic method of leaving a stack of wet paperwork in our lobby. What fun! What's more, we decided to get a head start on our pouring permit application! That's pretty exciting for us, because if it gets processed in a timely manner (it won't), we'll be able to start serving up pints in our taproom sooner than we'd expected! The downside (for us) is that we need to provide four hundred pages of supplementary documentation. And considering how many times the ABCC lost our paperwork last time,**** we'll be making good friends with all the good folks down at Kinko's!

On a related (but a little more serious) note, approval for our pouring permit depends on the results of a hearing (that's right - another dang hearing), which will be open to the public. Having been through our fair share of these things, we know that at some point the board will take comments from the public vis-à-vis whether or not the permit should be granted. So! If you're an Everett resident who would like to see our taproom fully operational (or if you know somebody who is), we'd love it if you could come out and support us! We'll probably be putting out another reminder or five as the meeting approaches, but if you're interested in helping us out, the meeting is on Monday, January 25th at 6:30 PM in Everett City Hall, 2nd floor, room 29. Hopefully we'll see you there!
